The best way to gauge how much antioxidants there are in wheat is to look at the whole grain, before it has undergone processing into flour and been made into cooked foods like bread or crackers. In this test, the researchers used whole grain wheat procured from India. Although its ORAC value is lackluster, it remains a rich source of the vital mineral manganese, along with moderate amounts of copper and magnesium.
