Are fresh green peas better for you than frozen or canned? When it comes to antioxidant content, you may be surprised to learn that eating them fresh actually provides less antioxidant content than frozen. The reason for this is because the polyphenols in green peas degrade quite fast after they have been harvested. By the time they reach the grocery store a few days later, only a fraction of the antioxidants remain.
The sample was tested in Norway and obtained from Hakon Gruppen, who is a major food distributor in the country. The value for samples obtained in the United States (or any other country) would likely be comparable.
