What is more nutritious, a chicken with or without skin? Based on ORAC testing for antioxidant amounts, the version without skin has 20% more antioxidants than the version with the skin. The suggests that the skin holds no or minuscule antioxidant value. However both test within the bottom 5% of all foods (in other words, 95% of foods have higher antioxidant values).
